Gas stoves and ranges come in all sizes and price level. One common theme to people that cook with a gas stove, "you can't take my gas stove." They like the control ability and fast response. In speaking to a chef at an upscale downtown restaurant , I asked, "what would you do if you had to switch to an electric stove, as the city may want you to do." His reply, "I'm out of here, but we have an induction stove for cooking Brussels sprouts.
